Hi...I was up all night sick with strep and was wanting to keep busy. I had some ripe bananas and decided to do a recipe search...I found yours. It is baking now, but I made a couple of changes. First thing I did was omit the nuts...my gang doesn't like it with nuts. Secondly...I love vanilla in my banana bread. So I added 1 teaspoon of Vanilla in with the soda water. I can't wait to try it.

I have made this recipe for years with the butter and sour cream instead of water. It is moist and wonderful. No wonder your gang at work can't resist snacking on this.

Hmmm... the sour cream version sounds good. I should try that next time. I still have some bananas in my kitchen. :) Thanks for stopping by.

Wow! I didn't realize I could post pictures on other people's recipes. The picture is a little dark on the monitor I'm on now, though. I'll brighten it up just a little bit.

I want to make this. Do you use 2 - 9x5's or what. It doesn't specify. But it seems like a lot to put in one 9x5. ???

Yes, I split the batter into 2 9x5. It works out great.
