I got this recipe from one of my coworkers. Everyone at work can't say no to his banana bread.

Ingredients
  • 1/2 cup Shortening (I use butter)
  • 1 1/2 cup Sugar
  • 1/2 tsp Salt
  • 2 Eggs
  • 4 Mashed Bananas (medium/large)
  • 1 1/2 tsp Baking Soda
  • 1/2 cup Water
  • 3 cup Flour
  • 1 cup crushed nuts

Directions
  1. Cream shortening, sugar and salt.
  2. Add eggs and bananas.
  3. Dissolve soda in water.
  4. Add soda water and other ingredients into the batter.
  5. Bake at 350F for 1 hour.

I have made this recipe for years with the butter and sour cream instead of water. It is moist and wonderful. No wonder your gang at work can't resist snacking on this.

I love this bread. It is so moist and not overally sweet. The flavor of the bananas really shines through. This recipe is DEFFINITLY a Keeper.

Great recipe, I used 2/3 cup sour cream and 1/4 cup of banana yogurt, disolved soda in a very small amount of water and van ext.


I want to make this. Do you use 2 - 9x5's or what. It doesn't specify. But it seems like a lot to put in one 9x5. ???


Yes, I split the batter into 2 9x5. It works out great.

Alterations


Hi...I was up all night sick with strep and was wanting to keep busy. I had some ripe bananas and decided to do a recipe search...I found yours. It is baking now, but I made a couple of changes. First thing I did was omit the nuts...my gang doesn't like it with nuts. Secondly...I love vanilla in my banana bread. So I added 1 teaspoon of Vanilla in with the soda water. I can't wait to try it.
