Banana Bread by Verondear

    Made a loaf following this recipe, with a few changes to use what I had on hand.

    Banana Bread

    I had white sugar, no brown sugar and searched specifically for a white sugar recipe. Used three large bananas.

    I had one cup of steeped crushed pistachio nuts with a scant 1/8 cup of half and half left in the nut mix from an ice cream base, so I added it to the banana batter. Waste not, want not. I added an extra 1/4 cup of nuts and 1/4 cup of craisins (low sugar).
    I used an 1/4 cup of Maker's Mark bourbon and a 1/2 tsp of vanilla to stir in the baking soda instead of water. I didn't use any additional water. It fit in one 9 x 5 well greased glass pyrex loaf pan.

    Smells wonderful. I pinched a crusty corner and it is good!!!

    I used butter. I had shortening, but it smelled OLD and funky. It made a very tall loaf. Liv said it was delicious and the bourbon flavor was very faint. The basic recipe would work beautifully. I hate banana bread where I get a bit of soda that did not mix in and this method guarantees that a sneaky lump of baking soda isn't present in the finished loaf.

    Lol, I didn't know shortening could go bad! This looks so good and I love all your additions. I know what you mean with the baking soda clumping, had it happen really bad once, yikes! :)
