This is another recipe from my childhood. We had this on a regular basis and it is delish! It has the added bonus of being very inexpensive.

Ingredients
  • 1 1/2 lb low fat ground beef
  • 1 onion
  • 1 large can tomatoes
  • 1 package egg noodles
  • 3 cans pinto beans (best prepared with cooked dried pintos)
  • Parmesan Cheese

Directions
  1. Cook egg noodles as directed on box and drain.
  2. Brown ground beef with onions.
  3. Add tomatoes and simmer for 10 minutes.
  4. Add pinto beans and noodles and heat through.
  5. Sprinkle with parmesan cheesse when served.
