Chicken Salad Veronique Recipe
One of our new favorites. I had this at a couple of catered affairs and decided to try and recreate it. Great summer salad.

Ingredients
  • 3 cups leftover chicken breasts
  • Kosher salt and freshly ground black pepper
  • 1/2 cup good mayonnaise
  • 1 1/2 tablespoons chopped fresh or 1 1/2 tsp dried, tarragon leaves,
  • 1 cup celery, diced fairly small (about 2 stalks)
  • 1 cup whole green grapes, (cut in 1/2 , if preferred)
  • 1/2 C sliced almonds

Directions
  1. Cut the chicken into a 3/4-inch cubes
  2. Place the chicken in a bowl
  3. Add the mayonnaise, tarragon leaves, celery, grapes, almonds and salt and pepper to taste
  4. Toss well
  5. Chill, covered 1 hour for flavors to blend
  6. Serve on bed of lettuce or spinach with sliced tomato on the side.
  7. Note: Red grapes can be substituted for green
  8. Note: Pecans or Pine nuts can be used instead of almonds
  9. Note: Be inventive
