Chicken Salad Veronique

- 3 cups leftover chicken breasts shopping list
- kosher salt and freshly ground black pepper shopping list
- 1/2 cup good mayonnaise shopping list
- 1 1/2 tablespoons chopped fresh or 1 1/2 tsp dried, tarragon leaves, shopping list
- 1 cup celery, diced fairly small (about 2 stalks) shopping list
- 1 cup whole green grapes, (cut in 1/2 , if preferred) shopping list
- 1/2 C sliced almonds shopping list
How to make it
- Cut the chicken into a 3/4-inch cubes
- Place the chicken in a bowl
- Add the mayonnaise, tarragon leaves, celery, grapes, almonds and salt and pepper to taste
- Toss well
- Chill, covered 1 hour for flavors to blend
- Serve on bed of lettuce or spinach with sliced tomato on the side.
- Note: Red grapes can be substituted for green
- Note: Pecans or Pine nuts can be used instead of almonds
- Note: Be inventive
