Happy Mother's Day everyone. This recipe came from my Mum and has always been one of my favourites. I hope you enjoy it!

Ingredients
  • 400 g of minced (ground) medium pork
  • 1/2 red onion, diced
  • 1 shallot, diced
  • 1 clove of garlic, minced
  • 3 tbsp soya sauce
  • 1 tbsp rice wine
  • 1 tbsp sugar
  • 1/2 tbsp 5 spice powder (found in most asian grocers)
  • 1 slice of ginger
  • 1 tbsp oil
  • 1 c water
  • 6 hard boiled eggs, peeled
  • 8 tofu puffs or fried tofu
  • salt and pepper
  • steamed rice

Directions
  1. Heat oil and brown onions, garlic and shallots.
  2. Add minced meat and brown slightly until 70% cooked.
  3. Add soya sauce, rice wine, ginger, sugar and 5 spice powder.
  4. Add eggs, tofu and water
  5. Bring items to a boil, cover, simmer over low heat for 20 minutes.
  6. Spoon over rice and serve.
