Red And Yellow Pepper Coleslaw In Honey Lime Dressing Recipe

Ingredients

3 T plus 1 t fresh lime juice

1 1/2 t grated lime zest

3 T chopped fresh cilantro

2 T honey

1 T cumin

salt

6 T olive oil

1 medium (2 lb) green cabbage

1 small red pepper

1 small yellow pepper

Directions

Combine lime juice, lime zest, cilantor, honey, cmmin, and 3/4 t salt in a large nonreactive bowl, and whisk well to blend

Whisk in olive oil

Set aside

Quarter the cabbage lengthwise and remove the tough core

Slice quarters thinly to yield 7 cups, place in non-reactive bowl

Slice bell peppers into strips 1/4 inch wide and 2 inches long, add to cabbage

Toss cabbage and bell peppers with the dressing

Taste, and if desired add more lime juice and salt

Cover and refrigerate at least 2 hours

Bring to room temp 30 minutes before serving, if desired

I tried this recipe and even hubby liked it. I will have to admit that I wasn't too sure when I whisked the dressing together and took a sample taste..but once it was mixed with the slaw veggies and chllled, we both liked it a lot. A nice change from the typical dressing for slaw. Give this one a big THUMBS UP!
