Red and Yellow Pepper Coleslaw in Honey Lime Dressing

- 3 T plus 1 t fresh lime juice shopping list
- 1 1/2 t grated lime zest shopping list
- 3 T chopped fresh cilantro shopping list
- 2 T honey shopping list
- 1 T cumin shopping list
- salt shopping list
- 6 T olive oil shopping list
- 1 medium (2 lb) green cabbage shopping list
- 1 small red pepper shopping list
- 1 small yellow pepper shopping list
How to make it
- Combine lime juice, lime zest, cilantor, honey, cmmin, and 3/4 t salt in a large nonreactive bowl, and whisk well to blend
- Whisk in olive oil
- Set aside
- Quarter the cabbage lengthwise and remove the tough core
- Slice quarters thinly to yield 7 cups, place in non-reactive bowl
- Slice bell peppers into strips 1/4 inch wide and 2 inches long, add to cabbage
- Toss cabbage and bell peppers with the dressing
- Taste, and if desired add more lime juice and salt
- Cover and refrigerate at least 2 hours
- Bring to room temp 30 minutes before serving, if desired
