How to make it

  • Put thie orange juice, cilantro, garlic, lime juice, olive oil, cumin, chilipowder, paprika, coriander, cayenne and salt in a blender and pulse until smooth, about 6 pulses
  • Using half of the marinade, coat both sides of the chops
  • Place the chops in a resealable freezer bag and refrigerate up to 4 hours
  • Transer the remaining marinade to a covered bowl and regfrigerate until grilling time
  • Heat gas grill to med high on one side, or arrange coals for medium hot on one side of grill
  • Cook the chops until nicely browned, about 2 minutes then turn and grill 2 minutes more
  • Transfer the chops to the cooller side of the grill and baste with the reserved marinade
  • Cover the grill, making sure the bottom and top vents are open
  • and grill, turning once, and basting again, until the chops are just cooked through, about 10-15 minutes more, til internal temp of 165
  • Serve immediately with mango lime relish if desired
