Love this - this recipe is so very close to our families - as an adult - I would have to double the bacon - and as you mentioned - perfect with substituting bacon with ham or pancetta. One restaurant did a side table demonstration and only used egg yolks - which makes for the ultimate creaminess! Giving it (and you) my high five forks overfilled with pasta carbonara!
