Rotisserie Chicken Pasta From Italian Market And Grill Recipe

Ingredients
- 5 oz. rotisserie chicken
- 2 T. roasted red peppers, diced
- 2 T. diced red onions
- 1 T. minced garlic
- ** 1 T capers, drained and 2 T. kalamata olives
- 2 oz. lemon butter
- 2 T. butter
- 1 tsp. salt
- 1-1/2 tsp. pepper
- 1 oz. olive oil
- 1/2 T. Rosemary
- 6 oz. penne pasta, cooked
- 2 pinches kosher salt
- 2 T olive oil
Directions
- Cook pasta according to package directions in boiling water that has been salted with kosher salt and also has 2 T olive oil added.
- Cook until al dente, drain and rinse
- Meanwhile, heat oil in pan.
- Add chicken, garlic, peppers, onion, rosemary, salt & pepper.
- ** Add capers and olives here **
- Saute until hot on high heat, then add lemon butter, pasta and adjust with salt and pepper.
- Heat until hot, then finish with whole butter--add and combine--ready to serve.

I am all about easy (I think it is written on a bathroom wall somewhere he he).. our local market has the most tender flavorful moist rotisserie chicken...this will be a pleasure to make...I love when I have all the other ingredients on hand...I just need the chicken. On the menu for tomorrow!!
