Zucchini Ricotta Casserole Recipe
ZUCCHINI RICOTTA CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Viler Estate in Georgetown, Texas in 1991.

Ingredients
  • 1 small white onion diced
  • 2 medium zucchini chopped
  • 1/2 teaspoon butter
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 teaspoon basil
  • 3 eggs
  • 1 pound ricotta
  • 1/2 cup grated cheddar cheese
  • 1/8 teaspoon nutmeg

Directions
  1. Sauté onion and zucchini in butter then stir in flour, salt, pepper and basil.
  2. Remove from heat then add remaining ingredients and mix well.
  3. Bake in a well sprayed casserole dish at 375 for 45 minutes.
