Simple Pasta Salad Recipe
Something light for a starch at dinner or for an addition to outdoor fare without a heavy mayo dressing.

Ingredients
  • one pound tri-colour pasta spirals
  • one medium red onion julienned
  • 4 large carrots grated
  • 1 cup slice black olives
  • 1/2 cup oil
  • 1 cup white vinegar
  • 1/2 cup water
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp italian herb mix
  • 1 pkg Good Seasons Italian Dressing mix (or fav)
  • optional: other veg or beans when handy

Directions
  1. Prepare pasta per instructions on package, drain and cool under cold water, drain, set aside
  2. In bowl combine vinegar, water, salt, pepper, dressing blend, herbs.
  3. into bowl add all veg and toss to coat.
  4. combine pasta and vinegar/veg mix and toss.
  5. add oil at end and toss to mix thoroughly.
  6. Great for making ahead, flavours improve and vinegar mellows.
  7. keep refrigerated

I use to hate Pasta but recently I have liked it. I guess my taste buds are changing with my age. Your recipe sounds very good.


This sounds great! I have to bring a dish to pass for our annual condo association circle jerk in September (pays to plan ahead, eh?) and this sounds perfect.
