This is a great one-pot meal Good served with crisp green salad, buttermilk biscuits and fresh fruit for dessert.

Ingredients
  • 1 1/2 Lbs. potatoes (4 cups), peeled, thinly sliced
  • Salt and black pepper
  • 1 can (17 oz.) whole kernel corn, drained
  • 1 green pepper, chopped
  • 1 large onion, chopped
  • 4 carrots, peeled, sliced
  • 1 1/2 Lbs. ground beef
  • 1/2 tsp. dried marjoram leaves
  • 1 can (8 oz.) tomato sauce
  • 1/2 cup grated Cheddar cheese
  • Parsley for garnish

Directions
  1. Preheat oven to 350.F
  2. Layer potatoes evenly in oiled baking dish. Sprinkle with salt and black pepper. Spread corn over the potatoes. Sprinkle with green pepper, onion and carrots.
  3. Crumble beef over the top. Sprinkle with marjoram and additional salt and black pepper. Top with the tomato sauce, spreading evenly.
  4. Bake, covered, for 30 min. Sprinkle with the cheese. Bake 10 to 15 min. longer. Garnish with parsley before serving.
