Ingredients
  • Beef Pot Pie
  • 1/4 cup flour
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 1- 1/2# Beef chuck, boneless and cut into 1/2-inch pieces
  • 1/3 cup onion, chopped
  • 1/3 cup celery, chopped
  • 3 Tbsp bacon grease (can use butter as substitute)
  • 1 cup beef broth
  • 1/2 cup beer or red wine (can use 1/2 cup beef broth as substitute)
  • 2 bay leaves
  • 1/2 tsp hot sauce
  • 1 tsp Worcestershire sauce
  • 1- 1/2 vegetables, cooked (corn, peas, green beans, carrots, potatoes, etc.)
  • 1/4 cup baby limas (optional)

Directions
  1. Heat bacon grease in deep skillet
  2. Mix together the flour, salt, paprika, and pepper until well combined
  3. Lightly dust meat with flour mixture
  4. Lightly brown meat
  5. Add onions and celery, cook until tender
  6. Add beer, broth, bay leaves, hot sauce and Worcestershire sauce
  7. Stir until it comes to a boil
  8. Turn heat down, cover, and let simmer for 45 minutes - stirring occasionally
  9. Remove from heat
  10. Stir in veggies and beans, cover, and set aside

  11. Preheat oven to 450 degrees

  12. Roll out larger portion of dough to fit bottom and sides of baking dish leaving about a 1/2 inch overhang
  13. Place in baking dish
  14. Pour meat mixture into pastry-lined pan
  15. Roll and cut reaming dough to fit top of baking dish
  16. Place dough on top of meat mixture
  17. Moisten 1/2-inch overhand of dough
  18. Carefully roll dough in toward center of pot pie, pinching together to seal
  19. Cut several steam vents in top crust
  20. Bake at 450 degrees for 10 minutes
  21. Reduce heat to 350 degrees and bake for an additional 30 minutes or until crust is brown and filling is hot

Looks great in the photo. the filling scores a 5, as for the pastry. do you use a regular pastry as for a pie? or is it one meant strictly for savory heavier pies like this is? in any case.. i'll be sure to let you know how it comes out. oh yeah... now is see the recipe below... i am begining to get the hang of this site. there is a lot of stuff i don't understand yet. like the group ratings??? anyhow.. and what is a recipe honor? so many recipes, so little time.


My sister, being culinary-ly challenged and all, uses a ready-made pie crust and it comes out good.

You are a woman after my own hart. This sounds great, I do have a question you talk about a sour dough crust…but I see no mention of it in the recipe. You then mention that your sister makes this with a ready made pie crust. Where does the sour dough come in? Never mind I just read a bit further and you answered all my questions. Now it sounds perfect. Thanks for a great post.

I tried your "A Cowboys Pot Pie" for dinner last night. OMG! It was even more delicious than I thought it would be. Since I always love the sourdough stuff, I made your sourdough crust too, very flaky...thanks so much for this recipe! I think I'll be hanging around here a lot!

Alterations


Sourdough Starter

1/2 package dry active yeast
1 Tbsp sugar
2 cups flour
2 cups warm water

Mix together yeast and sugar
Stir in 1/2 cup of warm water
Mix well until yeast has dissolved
Let set for 5 minutes
Stir together flour, remaining water and yeast mixture until smooth
Place in crock, mason jar, or non-reactive bowl
Cover loosely with cheesecloth or dish rag
Let set for 2 - 4 days
Then refrigerate



Sourdough Pie Crust

1- 1/2 cups flour
1/2 tsp salt
1/4 tsp baking soda
1/2 cup shortening or lard, cut into pieces and chilled
1/2 cup sourdough starter

Mix together flour, salt, and baking soda
Cut in chilled shortening or lard until flour mix looks like coarse crumbs
Stir in sourdough starter
Mix until just combined and dough leaves sides of bowl
Cut into 2 pieces (one pie
Divide dough into 1/3 and a 2/3 portions
Wrap separately in plastic wrap and chill until ready to use
