Ingredients
  • 2 cups buttermilk
  • 2 lb. flounder fillets, skinned
  • 1 cup cornmeal
  • 1/2 tsp. salt
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • Oil to fry

Directions
  1. Cut fish into serving size pieces
  2. Soak in buttermilk for 1 hour
  3. Remove from buttermilk
  4. Mix cornmeal, salt, paprika, and pepper together
  5. Coat fish in cornmeal mixture
  6. Preheat iron skillet with 3 tbls. oil
  7. Add fish and cook for 2-3 minutes
  8. Turn and cook other side for 2-3 more minutes or until fish flakes easily with a fork

Yummo! I will take the whole meal - fried fish, fries, slaw and tartar sauce...and maybe some hushpuppies. If I'm going 'fried' (one of my fave cooking methods), I might as well go all out, eh? And I have an ongoing love thang with seafood...*swoooon*...yes. Come to mama...

Add the sipping of something cold and dangerous - perfect!

I meant to say I like your recipe for your flounder. I cook a lot of Rex Sole, a very small flounder. For the Rex, its salt, pepper, dredge in flour and fry in olive oil. Don't even have to skim'em. Best JJ
