How to make it

  • Cut fish into serving size pieces
  • Soak in buttermilk for 1 hour
  • Remove from buttermilk
  • Mix cornmeal, salt, paprika, and pepper together
  • Coat fish in cornmeal mixture
  • Preheat iron skillet with 3 tbls. oil
  • Add fish and cook for 2-3 minutes
  • Turn and cook other side for 2-3 more minutes or until fish flakes easily with a fork

    I meant to say I like your recipe for your flounder. I cook a lot of Rex Sole, a very small flounder. For the Rex, its salt, pepper, dredge in flour and fry in olive oil. Don't even have to skim'em. Best JJ

    Hi Corrine...happy Monday!

    Yummo! I will take the whole meal - fried fish, fries, slaw and tartar sauce...and maybe some hushpuppies. If I'm going 'fried' (one of my fave cooking methods), I might as well go all out, eh? And I have an ongoing love thang with seafood...*swoooon*...yes. Come to mama...

    Add the sipping of something cold and dangerous - perfect!
