Greek Portobello Salad Recipe
Great with a steak, or for lunch with the girls! Marinate mushrooms for 1 hour before grilling.

Ingredients
  • 1 cup Greek Vinaigrette dressing, divided
  • 1 lb. Portobello mushrooms
  • 1 8-oz. package feta cheese, crumbled
  • 1 10-oz. package fresh spinach, torn
  • 3 plum tomatoes, sliced
  • 1/3 cup thinly sliced red onion
  • 1/4 c Kalamatta Olives, drained, sliced
  • 1/4 c Pepperoncini Peppers, drained

Directions
  1. In a shallow dish, pour 2/3 cup salad dressing over mushrooms, cover and refrigerate for one hour to marinate.
  2. Drain and discard dressing.
  3. Grill or broil mushrooms until cooked through, about eight to 10 minutes.
  4. Cut into slices.
  5. Toss mushrooms with remaining ingredients.

I absolutely love pasta salads! Getting to be that time of year isn't it. I doubt they'll be having it with the girls though!

I've actually never had portobelloes - I know - Don't shoot me. But this looks so good I might have to try. P.S. Shine, I don't see any pasta in this?! LOL You probably are suffering from recipitis, like I get when I browse too long. :-)
