Greek Portobello Salad

- 1 cup Greek vinaigrette dressing, divided shopping list
- 1 lb. Portobello mushrooms shopping list
- 1 8-oz. package feta cheese, crumbled shopping list
- 1 10-oz. package fresh spinach, torn shopping list
- 3 plum tomatoes, sliced shopping list
- 1/3 cup thinly sliced red onion shopping list
- 1/4 c Kalamatta olives, drained, sliced shopping list
- 1/4 c pepperoncini peppers, drained shopping list
How to make it
- In a shallow dish, pour 2/3 cup salad dressing over mushrooms, cover and refrigerate for one hour to marinate.
- Drain and discard dressing.
- Grill or broil mushrooms until cooked through, about eight to 10 minutes.
- Cut into slices.
- Toss mushrooms with remaining ingredients.

I absolutely love pasta salads! Getting to be that time of year isn't it. I doubt they'll be having it with the girls though!
