Breakfast Pockets

- 3 eggs shopping list
- 1 egg white shopping list
- 1 tablespoon water shopping list
- 4 small slices Canadian bacon shopping list
- dash of salt shopping list
- pepper to taste shopping list
- 1 oz reduced fat sharp cheddar, shredded shopping list
- 1 pita round shopping list
How to make it
- In a small bowl with a wire whisk beat together eggs, eggwhite, water, salt & pepper.
- preheat lightly coated non-stick skillet over medium heat.
- Scramble eggs and remove to a plate while eggs are still a little glossy. Top with the shredded cheese while still hot.
- Place Canadian bacon in the hot pan to warm.
- Cut pita round in half. Put half ot the eggs into each pita "pocket"
- Slip Canadian bacon into side of pocket.
- Enjoy.

- I wrap mine in a paper towel and then in foil to take it to work and it is still very good when I get there!
