How to make it

  • In a small bowl with a wire whisk beat together eggs, eggwhite, water, salt & pepper.
  • preheat lightly coated non-stick skillet over medium heat.
  • Scramble eggs and remove to a plate while eggs are still a little glossy. Top with the shredded cheese while still hot.
  • Place Canadian bacon in the hot pan to warm.
  • Cut pita round in half. Put half ot the eggs into each pita "pocket"
  • Slip Canadian bacon into side of pocket.
  • Enjoy.

  • I wrap mine in a paper towel and then in foil to take it to work and it is still very good when I get there!
