Cajun Pork Recipe
This is one of our favorite dishes. It is very flavorful and filling. It has only about 385 calories per serving which is pretty good considering this is the whole meal!

Ingredients
  • 2 lb boneless pork sirloin roast, trimmed and cut into 1" cubes
  • 1 tablespoon olive oil
  • 2 medium yellow bell peppers, cut into 1" pieces
  • 1 tablespoon cajun seasoning, can use your own or store bought
  • 1 can rotel tomatoes
  • 1 16oz package of frozen cut okra
  • 3 cups cooked brown rice
  • Hot sauce to taste

Directions
  1. Cook the pork in olive oil, half at the time, until done. Drain off fat.
  2. In a large dutch oven combine meat, bell peppers, cajun seasoning and tomatoes and simmer over low heat for about 45 minutes, covered..
  3. Stir in okra and cook for 30 more minutes, covered
  4. Serve over brown rice with hot sauce to taste.

Oh that just looks too good. My husband likes okra better than any other vegetable on earth. you know I have to make this.
