Sunday Best Chicken

- 16 slices bacon, chopped shopping list
- 8 boneless skinless chicken breast halves, cut in half crosswise shopping list
- 1 cup green onions, sliced shopping list
- 2 large garlic cloves, minced shopping list
- 3/4 cup kalamata olives, pits removed shopping list
- 2 cans stewed tomatoes, chunky pasta style shopping list
- 12 ounces tomato paste shopping list
- 1 1/2 cups white wine shopping list
- 2 teaspoons garlic salt shopping list
- 1 teaspoon basil shopping list
- 1/2 teaspoon red pepper flakes shopping list
- 1 pound linguine (I prefer mafalda noodles if you can find them) shopping list
How to make it
- In electric skillet, saute bacon until crisp; remove and set aside. Saute chicken in bacon drippings until brown on all sides; remove and set aside. Saute onions and garlic in drippings until soft; remove and set aside. Pour off drippings.
- In same skillet add reserved bacon, veggies, and the remaining ingredients (except pasta) stirring until well-combined. Add chicken, bring sauce to boil, reduce heat to simmer, cover and cook slowly for 1 hour.
- Cook pasta and drain. Mound pasta on large serving platter, pour sauce over, and arrange the chicken on top. Pass the freshly grated parm!
- NOTE: To make this gluten-free, use gf linguine or other gf pasta.
