Rhubarb Cake

- 2 eggs, beaten shopping list
- 1 1/4 c sugar shopping list
- 1 tsp soda shopping list
- 1/2 tsp salt shopping list
- 2 c flour, all purpose shopping list
- 1 c sour cream shopping list
- 2 1/2 c fresh rhubarb, diced finely shopping list
- Crumbs: shopping list
- 1 c sugar shopping list
- 1/4 c flour shopping list
- 1/4 c butter shopping list
- cinnamon shopping list
How to make it
- Mix together all cake ingredients, adding rhubarb last.
- Pour into greased and floured 9x13 pan
- Mix to crumble the crumb ingredients and sprinkle over top of batter.
- Sprinkle liberally with cinnamon and bake at 350F for 45mins.
- It smells wonderful and tastes even better.
- P.S. Don't worry if your crumbs don't hold their shape while baking; it still tastes great.
