Ingredients
  • 4 English muffins
  • 8 slices Canadian bacon
  • 8 eggs
  • 2 avocados
  • 1 cup mayonnaise
  • 2 tablespoons lime juice
  • Hot sauce to taste

Directions
  1. Toast muffins then place 2 halves on each plate.
  2. Lightly sauté bacon and top each muffin half with a slice.
  3. Poach eggs and top each slice of bacon with 1 egg.
  4. Mash avocados and whip in mayonnaise, juice and hot sauce with whisk until smooth.
  5. Pour over eggs Benedict.

Just the way I make mine, I sometimes add a thin slice of tomato. You have my 5 fork rating
P.S. could I have some steamed asparagus on the side

This is new to me and sounds easier than making the hollandaise sauce, so easy is good!
