If you use mustard, use the yellow stuff and add just a dash. Trust me, mustard will screw it up. The mayo flavor is the key to this flavor profile.

Hhinds: Horseradish sauce? Not in Southern Pimento Cheese. Pimento cheese has a delicate flavor profile. To each his or her own, but....this Horseradish sauce isn't the real stuff.
