How to make it

  • Boil sweet potatoes in their jackets until tender, about 25 minutes.
  • Let cool, then peel and cut them unto slices about 1-1/2" thick.
  • In a large skillet, melt butter, then stir in brown sugar and water.
  • Cook on medium heat about 5 minutes, then reduce heat and add sweet potato slices to skillet.
  • Cook gently, tossing lightly to coat until sweet potatoes are glazed and heated through. Sprinkle with coconut, before serving.
