Chicken And Cheese Panini Recipe

Ingredients

2 medium loaves of italian bread ( about 1 1/2 foot long each)

1 lb sliced Boars Head Buffalo Chicken Breast

1 tomato thinly sliced

1 cup shredded cheddar cheese

3 tbs mayonnaise

Directions

Split each loaf of bread in half and remove just a bit of the fluffy bread from the center

spread about 1 1/2 tbs of mayonnaise on top half of each loaf of bread

arrange sliced chicken on each loaf of bread slighly overlapping and folding to fit shape of bread

sprinkle half of the shredded cheese on each loaf of bread making sure not to sprinkle too close to the cut edge of the bread (this way when it melts it doesn't go all over the grill)

arrange tomato slices side to side on each loaf of bread in one layer. don't overlap

using a knife to hold down the filling carefully close each loaf of bread with no fillings sticking out the sides

cut each sandwich into four somewhat equal pieces and place on grill

close the grill and press down to squish sandwiches

grill for a few minutes until cheese is melted and bread is toasted

serve

***tomato usually gets really really hot so let them cool off a little before you eat***

BECAUSE tomatoes are all over the news lately...REPLACE THEM with roasted red peppers...I tried this last weekend with strips of jarred marinaded roasted red peppers and IT WAS EVEN TASTIER
