Onion Pie

This crustless onion pie is indeed very good. A nice non meat alternative
Ingredients
- 6 large onion thinly sliced shopping list
- 2 Tbs olive oil shopping list
- 6 eggs shopping list
- 1 cup soft brreadcrumbs shopping list
- 1/2 cup grated parmesan cheese shopping list
- 1/2 cup fresh chopped parsley shopping list
How to make it
- Grease a 10 inch pie pan.
- Saute onion in oil till golden brown
- Beat eggs and add to onions with breadcrumbs.
- Stir in cheese and parsley.
- Pour in pan and bake 350F until light golden about 40 minutes

I LOVE onion pie! Oh my gosh, I haven't had this in a very long time. My Mother often made onion pie but made a pastry for it. Words don't come close for expressing how good it was. I have never made it myself but it looks like I'm going to now. Than...more
