This crustless onion pie is indeed very good.
A nice non meat alternative

Ingredients
- 6 large onion thinly sliced
- 2 Tbs olive oil
- 6 eggs
- 1 cup soft brreadcrumbs
- 1/2 cup grated parmesan cheese
- 1/2 cup fresh chopped parsley
Directions
- Grease a 10 inch pie pan.
- Saute onion in oil till golden brown
- Beat eggs and add to onions with breadcrumbs.
- Stir in cheese and parsley.
- Pour in pan and bake 350F until light golden about 40 minutes

I LOVE onion pie! Oh my gosh, I haven't had this in a very long time. My Mother often made onion pie but made a pastry for it. Words don't come close for expressing how good it was. I have never made it myself but it looks like I'm going to now. Thanks Midgelet for sharing your recipe!

This is wonderful. I am off to a luncheon tomorrow and a few days ago we were discussing the menu. Someone in the group said there will be onion pie I never heard of such a pie before and cold not imagine how it would taste. I read yours and I can taste and smell the aroma.
