Apple Butter

- 8 lbs tart apples, (I like Jonathans or Mackintosh, I've also used Northern Spies or Ida Reds) shopping list
- 4 cups sweet cider shopping list
- 4 to 5 cups castor sugar (Grandma's original recipe says 7 3/4 cup) shopping list
- 2 tsp ground cinnamon shopping list
- 1 tsp ground cloves shopping list
How to make it
- Core and slice apples, no need to pare them.
- In a large sauce pot, cook apples and sweet cider until apples are soft, about 45 minutes, stirring occasionally.
- Press through a fine sieve.
- Return to sauce pot with sugar, cinnamon and cloves, and cook slowly, about 3 hours, stirring often.
- Pour into 4 hot pint canning jars, leaving 1/4 inch head space.
- Wipe rim of jars, place lids and screw bands on jars.
- Process in boiling water bath for ten (10) minutes.
- Remove jars and place on wire rack to cool, test for seal.
