Ingredients
  • 8 lbs tart apples, (I like Jonathans or Mackintosh, I've also used Northern Spies or Ida Reds)
  • 4 cups sweet cider
  • 4 to 5 cups castor sugar (Grandma's original recipe says 7 3/4 cup)
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves

Directions
  1. Core and slice apples, no need to pare them.
  2. In a large sauce pot, cook apples and sweet cider until apples are soft, about 45 minutes, stirring occasionally.
  3. Press through a fine sieve.
  4. Return to sauce pot with sugar, cinnamon and cloves, and cook slowly, about 3 hours, stirring often.
  5. Pour into 4 hot pint canning jars, leaving 1/4 inch head space.
  6. Wipe rim of jars, place lids and screw bands on jars.
  7. Process in boiling water bath for ten (10) minutes.
  8. Remove jars and place on wire rack to cool, test for seal.
