Ingredients

How to make it

  • Wash tomatoes and slice off a tiny bit of the base (so it can sit upright) and the top where stem is/was.
  • Using a spoon, remove "pulp" of tomatoes leaving a hollow, thick "bowl." (Leave a little bit of membrane at the bottom for support)
  • Get mushrooms started in a small pan with 1 tbsp. of the EVOO on medium-low heat.
  • Combine all herbs with a pinch of salt and pepper in a small ramekin.
  • Sprinkle a few pinches of the herb combination over the mushrooms as they cook.
  • In a separate pot, begin cooking the couscous according to the directions on the package. (Doesn't hurt to salt the water. Also, couscous only takes a second to cook so keep an eye on it!)
  • When the couscous is al dente, remove it from heat, strain if necessary, and toss into mushrooms.
  • Throw in the rest of the herbs and the other tbsp. of EVOO.
  • Stir for a minute or so and then remove from heat.
  • Stuff tomatoes with couscous mixture and top with a sprinkling of fresh goat cheese.
  • Tastes amazing warm, but is great chilled too.

    For those of you who don't have a clue and hate acronyms EVOO is Extra Virgin Olive Oil which is a much better thing to say in a recipe also there is nothing mentioned in the method about how you cook the tomatoes

    Cold couscous salads of any sort are SO good. I really like spooning it into the cold tomatoes when it is still warm from the stove. If you like it cold, adding a few fesh slices of cucumber sets off the dill and the tzatzaki like crazy!

    Love the sounds of this - have just recently discovered the joy of couscous...this would make such a perfect cold summer lunch, and the idea of tzatziki on top is perfect for me - thanks, cypress!
