Cream of Mushroom

- 100g Fresh button mushroom, sliced shopping list
- 60g butter shopping list
- 60g Plain flour shopping list
- 100ml evaporated milk shopping list
- 350ml Bone broth shopping list
- salt to taste shopping list
How to make it
- Melt butter in pot while adding flour gradually.
- Mix well.
- Gradually pour evaporated milk while stirring.
- The mixture will become dough-like.
- Add broth gradually while stirring, until it become creamy.
- Add in the mushroom and bring to a boil.
- Add salt to taste.
- Serve hot.
- Alternative - Cream of Chicken:
- Use 1 chicken breast meat instead of mushroom.
- Steam Chicken with 1/2 tablespoon Chinese cooking wine.
- Retain the sauce to be used together with the broth.
- Use chicken broth instead of bone broth.
- Cut Chicken into cubes or small pieces to be added to the soup last.
- Note:
- If you don't have broth, you can soup stock made using instant stock cubes.
- Don't use water. It will be very bland.
- Add more mushroom if you like.
- If you find the soup to watery, add more evaporated milk.
- You can also both mushroom and chicken to make Cream of Mushroom and Chicken.

This is a recipe that I use often. The canned soups hae too much salt...read the labels. It will frighten you. Thanks for posting this. And, besides, who doesn't run out of canned soups just when you need them?
