How to make it

  • Preheat oven to 400 degrees; lightly grease a 2 quart baking dish.
  • Wash, pare, and thinly slice the potatoes.
  • Cook potatoes and onions together on top of stove for about 5 minutes witrh 2 teaspoons of the salt; drain when slightly tender.
  • Melt butter in a saucepan; remove from heat; stir in flour, paprika, and remaining salt; blend in milk.
  • Cook this mixture on stovetop until thickened and smooth.
  • In prepared dish, layer 1/3 of potatoes and onions' sprinkle with one tablespoon of parsley; top with 1/3 of sauce; repeat layers.
  • Bake uncovered 35 minutes or until top is browned.
  • You can add a layer of cheddar cheese right before taking out of oven.... this is optional..
