Yummy Scalloped Potatoes

- 3 pounds or approximately 8 cups potatoes shopping list
- 4 medium onions, thinly sliced shopping list
- boiling water shopping list
- 3 teaspoons salt shopping list
- 3 tablespoons butter or margarine shopping list
- 2 tablespoons flour shopping list
- 1/8 teaspoon pepper shopping list
- 1/8 teaspoon paprika shopping list
- 2 1/4 cups milk shopping list
- 2 tablespoons chopped parsley shopping list
How to make it
- Preheat oven to 400 degrees; lightly grease a 2 quart baking dish.
- Wash, pare, and thinly slice the potatoes.
- Cook potatoes and onions together on top of stove for about 5 minutes witrh 2 teaspoons of the salt; drain when slightly tender.
- Melt butter in a saucepan; remove from heat; stir in flour, paprika, and remaining salt; blend in milk.
- Cook this mixture on stovetop until thickened and smooth.
- In prepared dish, layer 1/3 of potatoes and onions' sprinkle with one tablespoon of parsley; top with 1/3 of sauce; repeat layers.
- Bake uncovered 35 minutes or until top is browned.
- You can add a layer of cheddar cheese right before taking out of oven.... this is optional..
