Grilled Eggplant With Garlic

- 1 fresh eggplant (not japanese) shopping list
- 3 Tbsp olive oil shopping list
- 2 cloves garlic shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat grill
- Wash eggplant and pat dry
- Slice eggplant lengthways into 1/2 inch slices
- Put olive oil into small mixing bowl
- Using a garlic press, crush garlic into a prep bowl. I also smash the garlic using a teaspoon. Add to olive oil and use a whisk to blend. This step takes a few more seconds, but you will be happy with the results.
- Lay eggplant onto a cookie sheet and using a basting brush, brush with olive oil mixture.
- Salt and pepper to taste
- Cover and let sit in fridge for 15 minutes.
- Put eggplant on grill and cook for 5 minutes, then turn over and cook other side for 5 minutes.
- Adjust cooking time to your preference for texture. I don't like mine real soft.
- You can use this recipe for zucchini, yellow squash , or anything else that sounds good.

I love grilled eggplant and I make it with my fresh eggplant from the garden.
It looks so attractive with the grill marks and taste great when the flesh is nice and creamy.
