After being told the Cholesterol was a little high I didn't want to give up Fried Green Tomatoes so I came up with this. The taste and texture is very much like the fried version and may be better!

Ingredients
  • 4 medium to large green tomatoes
  • 1 cup buttermilk
  • Flour to dredge (can add a little cornmeal)
  • Spicy seasoning of your choice
  • Salt
  • Olive Oil

Directions
  1. Slice Green Tomatoes into 1/4" to 1/2" slices (I like them at 1/2")
  2. Season flour with seasoning of your choice and salt (last night I used some leftover Dry Rub for Barbeque recipe that can be found on this site by Dugger)
  3. Dredge tomatoes in flour mixture and place on a non-stick baking pan sprayed with cooking spray.
  4. Drizzle with olive oil
  5. Bake for 30 minutes. I turn the broiler on for a few minutes to crisp up to tops.

Since hubby is on the lower cholesterol diet, I'm always looking for taste treats that are better for him. This fits the bill nicely. Might be our addition to our brunch. Love this. Thanks for the post.
