PASTRAMI WITH RED ONION CHUTNEY PANINI

- 4 slices of rye bread...... shopping list
- 5 ounces of shaved pastrami...... shopping list
- 2 slices of cheddar cheese or swiss shopping list
- BBQ sauce to serve... shopping list
- ************************************* shopping list
- ************ chutney ************* shopping list
- 2 -tablespoons butter shopping list
- 2 -tablespoons chili oil shopping list
- 2 -red onions, sliced shopping list
- 1 -teaspoon black mustard seeds shopping list
- 2 -tablespoons sherry vinegar....... shopping list
- salt and pepper to taste ...... shopping list
How to make it
- make the chutney .
- heat the butter and chili oil in a frying pan and add the onions and mustard seeds.
- fry gently over low heat for about 15 minutes until the onions are soft and lightly golden in color.
- stir in the sherry vinegar..........season well and set aside to cool.
- spoon the onion chutney onto two slices of rye bread and layer the pastrami on top.
- place the cheese slices on the pastrami and top with the bread lids.
- toast in a sandwich grill for 3 to 4 minutes until the bread is toasted and the cheese has melted.
- serve immediately with BBQ sauce..............or your favorite sauce
