Ingredients

1 cup rolled oats

3/4 cup shredded coconut

1 cup flour

1 cup white sugar

1 tsp baking soda

1/2 cup butter, softened (not margarine)

1 tbls honey

3 tbls boiling water

2 tbls rum

Directions

Preheat oven to 300

Cover two cookie sheets with aluminum foil

Cream butter with sugar. Add coconut, honey and rum. Set aside

Sift together flour and baking soda and add to butter mixture

Mix with hands just until blended (this is important, use hands) Add boiling water and lightly mix again

Using hands, drop small amounts of batter on to cookie sheets leaving enough space for them to spread out

Bake for 14 to 15 minutes, or until golden brown (only one sheet at a time. I have tried two, but they do not bake evenly)

Let cool on cookie sheet, they will be soft and thin. Don't try to transfer to a cooling rack right away, they will fall apart.

- I added raisins. I put them in a small bowl and poured the 3 tbsp boiling water over them before adding.
-also, I just greased the baking sheet rather than using silver foil and they didn't stick.
