How to make it

  • Preheat oven to 300
  • Cover two cookie sheets with aluminum foil
  • Cream butter with sugar. Add coconut, honey and rum. Set aside
  • Sift together flour and baking soda and add to butter mixture
  • Mix with hands just until blended (this is important, use hands) Add boiling water and lightly mix again
  • Using hands, drop small amounts of batter on to cookie sheets leaving enough space for them to spread out
  • Bake for 14 to 15 minutes, or until golden brown (only one sheet at a time. I have tried two, but they do not bake evenly)
  • Let cool on cookie sheet, they will be soft and thin. Don't try to transfer to a cooling rack right away, they will fall apart.

    They are very yummy!!
    - I added raisins. I put them in a small bowl and poured the 3 tbsp boiling water over them before adding.
    -also, I just greased the baking sheet rather than using silver foil and they didn't stick.
