Anzac Biscuits With A Twist

- 1 cup rolled oats shopping list
- 3/4 cup shredded coconut shopping list
- 1 cup flour shopping list
- 1 cup white sugar shopping list
- 1 tsp baking soda shopping list
- 1/2 cup butter, softened (not margarine) shopping list
- 1 tbls honey shopping list
- 3 tbls boiling water shopping list
- 2 tbls rum shopping list
How to make it
- Preheat oven to 300
- Cover two cookie sheets with aluminum foil
- Cream butter with sugar. Add coconut, honey and rum. Set aside
- Sift together flour and baking soda and add to butter mixture
- Mix with hands just until blended (this is important, use hands) Add boiling water and lightly mix again
- Using hands, drop small amounts of batter on to cookie sheets leaving enough space for them to spread out
- Bake for 14 to 15 minutes, or until golden brown (only one sheet at a time. I have tried two, but they do not bake evenly)
- Let cool on cookie sheet, they will be soft and thin. Don't try to transfer to a cooling rack right away, they will fall apart.

These are wonderful with strawberry jam! We made them for a Vacation Bible school that had an Australian theme. Yumm! Thanks for posting!
