Ingredients
  • Cake:
  • 2 cups flour + 2 Tbsp for cake tin
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cup sugar
  • 1/2 cup shortening, softened
  • 1 cup milk
  • 1 tsp almond extract
  • 2 eggs
  • Topping:
  • Mix together -
  • 8 oz dried coconut
  • 4 Tbsp sugar
  • 5 Tbsp margarine, softened

Directions
  1. Preheat oven to 350F.
  2. Grease and flour a 9 inch round baking tin.
  3. In a large mixing bowl, sift together flour, baking powder, baking soda, salt and sugar.
  4. Add shortening, milk, almond extract.
  5. Beat for 2 minutes.
  6. Add eggs and beat for two minutes more.
  7. Pour into tin and bake for 15 minutes.
  8. Open oven door and spread topping mixture over cake top.
  9. Bake for 30 minutes or until inserted toothpick comes out clean.
  10. You can frost the side of the cake with vanilla & coconut icing for a fancier look.

Ok I just made this cake and it rocks!!! I didn't have a 9" pan so I used my round one with a hole in the middle and it rised up to the top what a great cake. Thank you for the recipe!!


I've made this...but not with the almond extract. That sounds good!
