I made this a lot my first year of marriage. It was quick, it was cheap (back then anyway) and my new hubby liked it. It also helped that my in-laws had a lemon tree. Boy I miss that, but it wouldn't like the Michigan winters!

Use instant brown rice, sautee a chopped small onion in butter and mix it with the rice before cooking, and use chicken broth in place of water. Top with parm towards end.

I substituted chicken broth for water, used instant brown rice, sauteed a small onion in butter and mixed that in with the rice before cooking, and topped it all with parmesan when it came out of the oven and then let it melt. Very nice recipe - simple and easy, too. Thanks!
