How to make it

  • Butter the bottom and sides of an 8x8 baking dish.
  • Measure rice into dish
  • Pour water or stock in, gently shake dish to even out the rice
  • Slice lemon thin, place 5 lemon slices on top of the rice, one in each corner and one in the middle. Place about 1/2 tsp butter in between lemon slices.
  • Place chicken breast on top of rice. Sprinkle salt, pepper and paprika over all and place one lemon slice on each chicken breast.
  • Cover and bake for 20 to 30 minutes until chicken is done.

    Meant to tell you a couple of days ago that I made this for dinner. Delicious! I did make some adjustments to our tastes. I substituted chicken broth for water, used instant brown rice, sauteed a small onion in butter and mixed that in with the rice before cooking, and topped it all with parmesan when it came out of the oven and then let it melt. Very nice recipe - simple and easy, too. Thanks!
