How to make it

  • Fillling:
  • Combine cornstarch and sugar in medium saucepan.
  • Stir in water.
  • Add egg yolks, zest and lemon juice.
  • Cook over medium heat, stirring often with a whisk until mixture comes to a boil.
  • Cook for 1 minute longer, then set aside to cool.
  • Topping:
  • Pour whipping cream and sugar into a mixing bowl. Set vanilla aside in a small bowl. Do not whip yet.
  • Dissolve gelatin in a cup with 1 Tbsp of boiling water. Make sure gelatin is completely dissolved and hot.
  • Whip the whipping cream, sugar and vamilla. While whipping drizzle the HOT gelatin mixture while whipping. DO NOT stop the mixer while adding the gelatin.
  • Continue whipping and add the vanilla
  • Continue to whip until the mix forms soft peaks.
  • To make the cake:
  • Slice the cake horizontally with a long serrated knife.
  • Spread fillling on bottom half and place top half on filling.
  • Frost the cake with the topping.
  • Cake should be refrigerated for storage.
