Sunny Lemon Cake

- 2 Tbsp cornstarch shopping list
- 3/4 cup sugar shopping list
- 1/2 cup water shopping list
- 2 egg yolks shopping list
- Zest of one lemon shopping list
- 1/4 cup lemon juice shopping list
- 1 Tbsp butter shopping list
- *Topping: shopping list
- 1 cup heavy whipping cream shopping list
- 3 Tbsp sugar shopping list
- 1/2 tsp vanilla shopping list
- 1/2 tsp unflavored gelatin shopping list
- 1 Tbsp of water shopping list
How to make it
- Fillling:
- Combine cornstarch and sugar in medium saucepan.
- Stir in water.
- Add egg yolks, zest and lemon juice.
- Cook over medium heat, stirring often with a whisk until mixture comes to a boil.
- Cook for 1 minute longer, then set aside to cool.
- Topping:
- Pour whipping cream and sugar into a mixing bowl. Set vanilla aside in a small bowl. Do not whip yet.
- Dissolve gelatin in a cup with 1 Tbsp of boiling water. Make sure gelatin is completely dissolved and hot.
- Whip the whipping cream, sugar and vamilla. While whipping drizzle the HOT gelatin mixture while whipping. DO NOT stop the mixer while adding the gelatin.
- Continue whipping and add the vanilla
- Continue to whip until the mix forms soft peaks.
- To make the cake:
- Slice the cake horizontally with a long serrated knife.
- Spread fillling on bottom half and place top half on filling.
- Frost the cake with the topping.
- Cake should be refrigerated for storage.
