Great Chicken Salad Recipe Blondeberry / All my dishes

This is great alone, in a sandwich or really really good in my savory cream puffs - listed already. Served in a tea house in Jacksonville Fl. ( my pre-vegetarian days)

Blondeberry

Ingredients
  • 2 lbs. cooked chicken breast
  • 1/3 cup toasted pecans chopped
  • 1/3 cup diced onion
  • 1 cup diced celery
  • 1/8 tsp. curry powder
  • 1/4 cup chicken stock
  • mayonnaise, as needed
  • salt and pepper to taste

Directions
  1. Dice cooked chicken till fine.
  2. Add remaining ingredients.
  3. Mix until chicken is well coated.
  4. Serve on a bed of lettuce, as a sandich or in my Savory Cream Puffs. (great for a luncheon)
