Scalloped Asparagus

- 1 pound fresh asparagus shopping list
- 4 tablespoons butter shopping list
- 1 tablespoon rice flour or regular flour shopping list
- 1 cup milk shopping list
- 4 hard cooked eggs finely chopped shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 2 tablespoons fine dry bread crumbs (for gluten free use gluten free bread crumbs or crushed corn flakes) shopping list
- 1/2 cup grated swiss cheese shopping list
How to make it
- Preheat oven to 400F. Bring a large saucepan of salted water to boiling. Grease a 1 1/2 quart baking dish.
- Snap of tough ends of asparagus; trim off any sandy scales. Wash.
- Add asparagus to boiling water. Cover; lower heat and simmer for 10 minutes or until ower parts of stalks are for tender. Drain.
- Cream sauce: Melt 1 tablespoon butter in small saucepan. Stir in flour; cook 1 minute. Gradually stir in milk. Cook stirring constantly until sauce thickens about 3 minutes. Remove from heat.
- Arrange half the asparagus in prepared dish. Sprinkle with half the chopped egg; dot with 1 tablespoon butter; season with salt and cayenne pepper. Arrange another layer with remaining asparagus. Sprinkle the center portion the asparagus with the remaining chopped egg. Pur the reserved cream sauce down the middle of casserole. Sprinkle with bread crumbs or crushed corn flakes and cheese. Dot uncovered portions with remaining butter. Bake covered for 15 minutes; uncover and bake 2 minutes until browned.
