sweet and savoury salad with pear and blue cheese

- 1/2 bartlett pear-sliced and cut into bite size pieces shopping list
- 1/4 green apple-shredded (soaked in orange juice to keep from turning brown) shopping list
- 1/2 an endive head-sliced shopping list
- small handful of bitter green such as baby arugula shopping list
- 2 TBSP crumbled blue cheese shopping list
- fresh cracked pepper from a mill shopping list
- dressing shopping list
- 2 TBSP balsamic vinegar shopping list
- 1 TBSP maple syrup (or honey or sugar) shopping list
- 1 clove of garlic-crushed shopping list
- regular olive oil (not virgin)-to taste-about 4-6 TBSP shopping list
How to make it
- Combine all ingredients for dressing in a small jar or plastic container and shake until emulsified...about 2/3 oil and 1/3 other liquids. Set aside.
- Mix endive and arugula in a medium size bowl with shredded apple.
- Drizzle lightly with some dressing and toss gently, thoroughly coating each piece.
- Arrange pear on top and drizzle with about another 1 TBSP dressing.
- Add blue cheese and finish with fresh cracked pepper.
- Enjoy!
- *the reason not to use virgin olive oil is that the flavour is too heavy and wil overpower the light taste of this salad.
