This is a version of a recipe I found on the Meals For You website and simplified it even further for a member of Group Recipes. It is hard to make a mistake with this one!

Ingredients
  • 1 tsp. unsalted butter
  • 1/2 tsp salt to taste - remember ham can be salty
  • 1/2 cup onion, chopped
  • 1/4 lb. sliced cooked ham, chopped
  • 1/2 lb. fat-free Swiss cheese, shredded
  • 2 Tbs. all purpose flour
  • 3 eggs, beaten
  • 1 cup buttermilk
  • 1/8 tsp. ground nutmeg
  • 1 frozen 9 inch pie shell

Directions
  1. Preheat oven to 400°F.
  2. Melt butter in a heavy nonstick skillet over medium high heat.
  3. Sauté onion 5 minutes, or until tender.
  4. Transfer onion and next 3 ingredients to a bowl.
  5. Combine eggs and buttermilk in another bowl.
  6. Season with salt to taste and stir in onion mixture.
  7. Pour into pie shell.
  8. Sprinkle nutmeg on top
  9. Bake 35-45 minutes or until center is set.
