Fresh Tomatoes And Swiss Cheese Pie Recipe

Years ago, I ran across this recipe, made it, fell in love with the flavors. I always look forward to "home-grown" tomatoes just for this wonderful pie! Makes a very nice presentation!

Ingredients
- 1 9 inch flaky pastry crust (I make mine)
- Enough fresh sliced tomatoes to cover bottom of crust
- Enough quality mayonnaise to cover tomatoes
- Fresh basil
- Salt and freshly ground black pepper to taste
- Swiss cheese, shredded or *cheese of your choice*
- Paprika
- Chopped green onions, optional
Directions
- This is so very easy!
- Place unbaked crust in pie pan
- Line unbaked crust with sliced tomatoes
- Sprinkle with salt and pepper
- Sprinkle with fresh basil
- Cover with a layer of mayonnaise, bringing to the edges of crust
- Cover with shredded Swiss Cheese
- Sprinkle with a little paprika
- Bake in a 375 degree oven until edges of crust are lightly browned
- Cheese will be bubbly
- Remove from oven, and you may sprinkle with finely chopped green onions before serving
- Delicious

Sounds fresh and re-freshing! Nothing like homegrown tomatoes! Sometimes in the morning I will put sliced tomatoes on a slice of sourdough bread, then sprinkle with Parmesan cheese and pop in the toaster. Thanks!
