Fresh Tomatoes And Swiss Cheese Pie Recipe Rosemaryblue / All my dishes

Years ago, I ran across this recipe, made it, fell in love with the flavors. I always look forward to "home-grown" tomatoes just for this wonderful pie! Makes a very nice presentation!

Ingredients
  • 1 9 inch flaky pastry crust (I make mine)
  • Enough fresh sliced tomatoes to cover bottom of crust
  • Enough quality mayonnaise to cover tomatoes
  • Fresh basil
  • Salt and freshly ground black pepper to taste
  • Swiss cheese, shredded or *cheese of your choice*
  • Paprika
  • Chopped green onions, optional

Directions
  1. This is so very easy!
  2. Place unbaked crust in pie pan
  3. Line unbaked crust with sliced tomatoes
  4. Sprinkle with salt and pepper
  5. Sprinkle with fresh basil
  6. Cover with a layer of mayonnaise, bringing to the edges of crust
  7. Cover with shredded Swiss Cheese
  8. Sprinkle with a little paprika
  9. Bake in a 375 degree oven until edges of crust are lightly browned
  10. Cheese will be bubbly
  11. Remove from oven, and you may sprinkle with finely chopped green onions before serving
  12. Delicious
