Ingredients
  • 1 cup packed fresh Italian parsley
  • 1/2 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 1/4 cup packed fresh cilantro
  • 3 garlic cloves, minced (use to taste)
  • 1 teaspoon ground black pepper or hot paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt

Directions
  1. Blend all ingredients in a food processor.
  2. Let stand for a couple of hours for the flavors to blend.
  3. Use as a marinade or room temperature as a sauce.

I like the way this sounds......


I love chimichurri, but my guilty pleasure is when it is tossed over hot french fries!! It is a great sauce and it so much better fresh than when it is bottled. More garlic, more better.


Never heard of chimichurri before...love what I see now!!


It is almost a pesto - a cup of Parmesan blended with it would probably make a decent one? BWDIK?
