How to make it

  • In a skillet heat oil
  • Add pepper flakes and ginger
  • Cook for 1 minute
  • Add lime juice, fish sauce and brown sugar
  • Cook, stirring, for 1 minute
  • Add chicken thighs
  • Cook for 8 minutes
  • Increase heat to high and cook another 5 minutes, watching carefully so that it doesn't burn.
  • Serve sprinkled with fresh, chopped cilantro

    This is delicious! We had it for dinner tonight... super fast and uber yummie! Even our 3yo liked it!

    As a side note, we agreed that we like it better without the cilantro - it feels like more of a distraction than a compliment to flavor.
