Sticky Thai Thighs Recipe
A quick way to impress. Serve with rice and a big salad. A standby at my house.

Ingredients
  • 2 tsp vegetable oil
  • 1 tsp dried red pepper flakes
  • 1 tbsp grated fresh ginger
  • 3 tbsp lime juice (preferably fresh)
  • 3 tbsp fish sauce
  • 1/3 cup dark brown sugar
  • 8 chicken thighs
  • cilantro

Directions
  1. In a skillet heat oil
  2. Add pepper flakes and ginger
  3. Cook for 1 minute
  4. Add lime juice, fish sauce and brown sugar
  5. Cook, stirring, for 1 minute
  6. Add chicken thighs
  7. Cook for 8 minutes
  8. Increase heat to high and cook another 5 minutes, watching carefully so that it doesn't burn.
  9. Serve sprinkled with fresh, chopped cilantro

This is delicious! We had it for dinner tonight... super fast and uber yummie! Even our 3yo liked it!

As a side note, we agreed that we like it better without the cilantro - it feels like more of a distraction than a compliment to flavor.
