Glendas Best Zucchini Bars Recipe

Ingredients

2 c. sugar

1 c oil

3 eggs

2 c flour

1 tsp cinnamon

1 tsp salt

2 tsp soda

1/4 tsp baking powder

1 tsp vanilla

2 c shredded zuchinni

1 carrot shredded

3/4 c rolled oats

1 c chopped nuts, (hickory, walnut or which ever you choose)

Frosting:

1/2 c soft sweet butter

1/4 tsp almond extract

2 tsp vanilla

2 1/2 c confectioners sugar

1 - 3oz pkg cream cheese, softened

Directions

Beat sugar and eggs and oil

Combine flour, cinnamon, salt, soda baking powder and beat in.

Add vanilla.

Beat for 1 to 2 minutes until well mixed

Fold in zucchini, carrot, oats and nuts

Pour into prepared 15x10x1 jellyroll pan

Bake at 350 degrees for 15 - 20 minutes

Combine frosting ingredients and frost when cooled.
