Picking a ripe pineapple is easy. Pineapples are either ripe or not when they picked. They don't ripen any more once picked. Pull the very center leaf, if it pulls out easily, its ripe. That's all there is to picking a ripe pineapple.

I remember at the Dole Plantation in Hawaii being told to select a heavy pineapple and the larger ones are the first fruit of the plant and best and also the more yellow the outside the riper the inside. Your system's easier!!

Also, to ensure that it is uniformly sweet, after slicing leaves off turn upside down for 15-20 minutes so juices that have accumulated in the bottom (cause that's what they do) can run through to the top part. Then cut, slice or whatever!
