How to make it

  • In a small pan, combine vinegar, sugar, water and salt.
  • Cook over medium heat, stirring, until it boils and sugar is dissolved.
  • Remove from heat and let cool to room temp.
  • Peel or score cucumber if you want. Slice thinly about 1/8 inch thick. Place in a serving bowl.
  • Pour marinade over the cucumbers and stir to blend.

    These are served at my favorite Thai restaurant and they are fabulous. Thanks for the recipe. I will be making these for Sunday dinner, I have a bunch of cucumbers I picked up from the Farmers Market. Great post. You have my 5.

    Hi Jen, I love cucumbers. They really are a good cool down in the summer. This sounds close to an overnight pickle recipe I used to make for spicy asian dishes... Are you supposed to marinate these for a length of time or serve as is??
