We used to eat out at Thai restaurants a lot and usually whenever we ordered something spicy they brought out a small bowl of cucumbers. They would be crisp, refreshing and sweet on the tongue a perfect cooling foil to the spicy food.

Hi Jen, I love cucumbers. They really are a good cool down in the summer. This sounds close to an overnight pickle recipe I used to make for spicy asian dishes... Are you supposed to marinate these for a length of time or serve as is??

I usually put in the fridge for about 2 hours and no more so they keep their crunch.
