Pittsburghs Favorite Wedding Soup Recipe
A Pittsburgh staple! This recipe doesn't have orzo in it, but feel free to add as much cooked orzo as you wish! Without the pasta, it is gluten-free - if you use gf breadcrumbs. Or use a gf tiny pasta to enjoy it the traditional way.

Ingredients
  • 1/2 pound ground beef, extra lean
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 Tablespoon fresh parsley, finely minced
  • 2 Tablespoons parmesan cheese
  • 1 tablespoon dry bread crumbs - gf to make this gluten-free
  • 28 ounces chicken broth
  • 1 package frozen spinach, chopped

Directions
  1. Combine ground beef, salt & pepper, parsley, cheese, bread crumbs & 3 T. water. Form into tiny balls. Brown in olive oil & drain. Bring broth to a boil, add meatballs & cook 10 minutes. Add spinach & cook about 5 minutes more.
  2. If you wish, add cooked orzo or other tiny pasta to make it the traditional way.

This looks really good. I'd probably put in some leftover pasta or small amounts left in the pantry. Beans would be a nice addition too.
