Ingredients
  • ½ cup chopped fresh cilantro
  • ¼ cup toasted sesame oil
  • ½ cup finely sliced green onions
  • ¼ cup dark soy sauce
  • ¼ cup minced garlic
  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 2 tablespoons hot bean paste
  • 1 tablespoon chili paste (pla yang for mild heat and nice flavor or Tadang for a real slap and nice flavor)
  • 1 ½ pounds boneless chicken thighs

Directions
  1. Combine all the ingredients except for the chicken in a large Ziploc bag or mixing bowl. Mix well.
  2. Add the chicken, cover with the marinade and marinate overnight covered in the refrigerator, turning the chicken whenever you think about it.
  3. Cook on the grill, but save the marinade.
  4. Cook the remaining marinade in a small saucepan over medium heat for about 10 minutes This is your dipping sauce.

Hey Ray baby...I grilled these beauties last night and they totally knocked my socks off! I love the depth and complexity of flavors going on in the marinade...it really makes the chicken sing - and makes a dipping sauce that I could hardly stop eating.

I marinaded my chicken for about 24 hours and I used bone-in thighs and legs because that's what I had in the freezer. And I went the way of the 'slap'...of course. Mmmmm....love that heat.

I served it with grilled asparagus and a veggie-quinoa salad. It was all so good - but that chicken was definitely the star of the show. Bravo, my sweet! This is the sixth recipe of yours I've made and you are batting a solid 1000. Love you! ;-)~ Vickie
