Roasted Tomatillo Salsa

- 1 pound fresh tomatillos, husks discarded shopping list
- 3 cloves garlic, unpeeled shopping list
- 2 large jalapeno peppers shopping list
- 1 yellow onion, quartered shopping list
- juice of 1 lime shopping list
- 1/2 cup chopped fresh cilantro shopping list
- 2 tablespoons olive oil shopping list
- 1/2 teaspoon each: sugar, salt, freshly ground pepper shopping list
How to make it
- Heat oven to 500 degrees. Place tomatillos, garlic, jalapenos and onion in an ungreased baking pan. Cook, stirring once, untill vegetables are charred, about 15 minutes; set aside to cool. Remove stems (but not seeds) from peppers:discard. Peel garlic.
- Transfer ingredients to a food processor: process untill coarsely chopped. Transfer to a medium bowl; stir in lime juice, cilantro, olive oil, sugar, salt and pepper untill well-blended. Salsa will keep, refrigerated, up to 4 days.

This is great! I have always wanted to make this salsa. Homemade is so much better than store bought. Thanks for the recipe, I also grilled instead of baked because didn't want to turn on the oven in the summer. Thanks!
