How to make it

  • For Quinoa:
  • Put quinoa and water into a saucepan with and add salt. Bring to a boil, lower to a simmer, and cook 18-20 minutes, til water is gone and quinoa is tender.
  • For the vinaigrette: Mix all ingredients together in a small bowl.
  • Prepare extra ingredients, and toss everything together.
  • Check for seasoning, add extra salt, pepper, and extra olive oil if desired.
  • Garnish with parsley and extra feta.

    I didn't have feta or tomatoes, so I used green onion in it along with shredded carrot for color. It was very good!

    LOVE Quinoa... "the superfood". I always keep some cooked, plain quinoa in the fridge. It's so versatile. And a real nutrition powerhouse. If you haven't tried it, what are you waiting for? This recipe sounds delish. Thank you!

    Thanks for the recipe. My children love quinoa so we cook with it quite a bit. This definitely sounds like a great summer salad!
