Easy Eclair Layer Dessert
From jaeleepoms 17 years agoIngredients
- 1 box regular or honey graham crackers shopping list
- 2 - 3 oz packages instant french vanilla (or vanilla) pudding mix shopping list
- 3 cups milk shopping list
- 1 - 8 oz container frozen whipped topping, thawed shopping list
- 1 – 16 oz container prepared chocolate frosting shopping list
How to make it
- Spray the bottom of a 9x13-inch pan with nonstick spray and line with graham crackers.
- In a large bowl, combine pudding mix and milk. Stir well. Stir in whipped topping with the prepared pudding.
- Spread half of the pudding mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding mixture. Top with a final layer of graham crackers and frost with chocolate frosting. Refrigerate until serving.
- NOTES – Use the French Vanilla flavored whipped topping if you can find it (this is usually a seasonal item carried around the holidays). Also, use Betty Crocker Pour & Frost chocolate flavored frosting for a smooth top. Or, you can make a simple ganache by melting 8 oz of semisweet chocolate chips with some heavy cream and/or butter. The graham crackers become more pastry-like the longer this sits before serving (a few hours or overnight is best).

Made this up tonight and everyone really enjoyed it. It was easy to make and tastes great! I made my own ganache to go over the top with 8 oz. of semi-sweet chocolate and a cup of heavy cream.
